Ingredients

  • 30 ripe tomatoes
  • 3 green peppers
  • 3 red peppers
  • 6 onions
  • 1 bunch celery
  • 1 quart vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 5 tablespoons salt

Instructions

  1. Process the vegetables.
  2. Sprinkle the vegetables with salt.
  3. Let stand for 1 hour and then drain.
  4. Add vinegar and spices; cook until tender.
  5. Put into hot sterile jars or process in hot water bath for 10 to 15 minutes and seal.
