Ingredients

  • 1 lb chicken parts
  • 4 cups cooked white rice
  • 1/3 cup peanut oil
  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 2 scallions
  • 1/2 cup cashews

Instructions

  1. Cook the chicken by boiling in a large pot.
  2. Remove the chicken when done and pull off the bones.
  3. Reserve 2 tablespoons of the cooking liquid.
  4. Remove the chicken skin and shred the chicken.
  5. Heat peanut oil, sesame oil, and soy sauce in a large skillet.
  6. Add the shredded chicken to the skillet; heat through.
  7. Add chopped scallions, reserved broth, and cashews to the skillet.
  8. Cook until the mixture is hot and well combined.
  9. Serve over hot cooked white rice.
