Egg Foo Yung is a savory Chinese-style omelette loaded with chicken, shrimp, mushrooms, and green onions, perfect for a quick, flavorful meal or brunch option.

Ingredients

  • 1/4 lb. cooked chicken
  • 1/4 lb. cooked shrimp
  • 4 mushrooms
  • 8 stalks green onion
  • 1 stalk celery
  • 5 eggs
  • 1/2 tsp. salt
  • 1/2 cup bean sprouts
  • 3 to 4 Tbsp. peanut oil

Instructions

  1. Coarsely chop cooked chicken, cooked shrimp, and mushrooms. Mince green onions and celery.
  2. Beat eggs in a bowl. Add salt and mix well.
  3. Stir in chopped chicken, shrimp, mushrooms, green onions, celery, and bean sprouts into the beaten eggs.
  4. Heat 1/2 tablespoon peanut oil in an 8-inch frypan over medium-high heat.
  5. Reduce heat to medium. Pour 1/4 cup of the egg mixture into the frypan.
  6. Cook for 1 minute on each side until lightly browned.
  7. Keep cooked egg patties warm in a 200°F oven.
  8. Repeat the process with remaining batter, adding more oil as needed.
  9. Serve hot with Foo Yung Sauce.
