Ingredients

  • 1 large chicken or chicken parts
  • 1 large pan cornbread
  • 1/3 loaf stale light bread
  • 4 Tbsp sage
  • salt
  • pepper
  • 1 large onion

Instructions

  1. Boil the chicken until cooked, then remove from bones and set aside.
  2. Make the cornbread and have it ready.
  3. Mix the crumbled cornbread with the stale light bread.
  4. Cook chopped celery and onion in broth with margarine or butter until tender.
  5. Mix the bread mixture with sage, salt, and pepper.
  6. Add the cooked celery and onion along with the broth from the chicken to the bread mixture.
  7. Stir in the eggs.
  8. Punch the chicken breasts down into the dressing.
  9. Ensure there is enough broth so the dressing is moist but not dry.
  10. Bake the mixture at 325°F for about 1 1/2 hours, or longer if needed.
