Ingredients

  • 6 oz. uncooked pasta
  • 3/4 c. butter
  • 1 Tbsp. Cajun poultry seasoning
  • 3/4 lb. boneless, skinless chicken breasts
  • 3 c. sliced mushrooms
  • 1/4 c. minced green onion tops
  • 3 Tbsp. minced parsley
  • 1 tsp. minced garlic
  • 1 c. chicken stock

Instructions

  1. Cook the pasta according to package directions.
  2. Drain and rinse the pasta with hot water, then cold water.
  3. Mash 4 tablespoons of butter in a medium bowl and combine with Cajun poultry seasoning.
  4. Add the chicken breasts cut into strips to the butter mixture and coat well.
  5. In a large skillet, melt the remaining butter over medium heat.
  6. Add the seasoned chicken strips and cook until browned and cooked through.
  7. Add sliced mushrooms to the skillet and sauté until tender.
  8. Pour in the chicken stock and bring to a simmer.
  9. Stir in minced garlic, green onion tops, and minced parsley.
  10. Cook for a few minutes until flavors meld and sauce thickens slightly.
  11. Serve the chicken and mushroom mixture over the cooked pasta.
