Chicken Breast Glace
Juicy chicken breasts glazed with a tangy mayonnaise and sour cream sauce, infused with herbs and citrus, perfect for elegant dinners or special occasions.
Ingredients
- 6 whole chicken breasts ⓘ
- 1 large onion
- 3/4 cup white wine ⓘ
- 2 cloves garlic ⓘ
- 1 carrot ⓘ
- 4 ribs celery ⓘ
- 1 teaspoon thyme ⓘ
- 1/2 teaspoon tarragon ⓘ
- 5 to 6 peppercorns ⓘ
- salt ⓘ
- 2 (10 1/2 oz.) cans chicken broth ⓘ
- 1 cup mayonnaise ⓘ
- 1 cup sour cream ⓘ
- 1 tablespoon gelatin ⓘ
- juice of lime or lemon ⓘ
- capers or nasturtium leaves
- lime peel ⓘ
Instructions
- Place chicken breasts, onion, white wine, garlic, carrot, celery, thyme, tarragon, peppercorns, and salt in a heavy kettle. Cover with chicken broth and cook until tender.
- Allow the chicken to cool in the broth.
- Remove the chicken from the stock, carefully skin and debone, keeping each side of the breast intact.
- You now have 12 supremes.
- Cook the stock down to about one pint of liquid. Strain and chill.
