Chicken Breasts Provolone

Ingredients

  • 4 Tbsp. flour, divided
  • 1 tsp. tarragon
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 4 skinned chicken breasts
  • 2 Tbsp. butter
  • 4 slices ham (2 oz.)
  • 1/3 c. dry white wine
  • 2/3 c. evaporated milk
  • 1 c. shredded Provolone cheese

Instructions

  1. In plastic bag, combine 2 tablespoons flour, tarragon, salt and pepper.
  2. Add chicken.
  3. Melt butter in pan and saute chicken until golden and cooked through.
  4. Remove to heated platter.
  5. Cut ham into strips.
  6. Cook 2 to 3 minutes in the same skillet.
  7. Place over chicken.
  8. Stir 2 tablespoons flour into drippings in skillet. Blend well.
  9. Stir in wine.
  10. Gradually add milk until it boils and thickens.
  11. Add cheese until melted.
  12. Serve over chicken.
  13. Serve with rice.
