Ingredients

  • vegetable oil
  • 1 onion, sliced
  • 2 chicken breast halves, skinned and boned
  • 1 tsp. mayonnaise
  • 1 tsp. Dijon mustard
  • 2 carrots, cut in strips
  • 1 zucchini, sliced
  • 1 can sliced mushrooms
  • salt and pepper
  • 1 Tbsp. butter or margarine
  • basil
  • garlic powder
  • paprika

Instructions

  1. Tear off 2 (12 x 18-inch) sheets of aluminum foil and rub them lightly with vegetable oil.
  2. Place sliced onion on each sheet of foil.
  3. Flatten the chicken breasts to 1/4-inch thick and place them over the onions.
  4. Combine mayonnaise and Dijon mustard to make a spread.
  5. Spread the mayonnaise mixture over each chicken breast.
  6. Top each chicken breast with carrots, zucchini, and sliced mushrooms.
  7. Season with salt and pepper to taste.
  8. Dot each package with butter or margarine.
  9. Sprinkle with basil, garlic powder, and paprika.
  10. Seal the edges of the foil tightly to make a secure package.
  11. Bake at 400°F (200°C) for 30 minutes.
