Ingredients

  • 1 cup quick cooking rice
  • 1 cup boiling water
  • 4 tablespoons margarine
  • 1 medium onion, chopped
  • 1/2 cup Cheez Whiz
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 box frozen chopped broccoli, thawed
  • 1 cooked and deboned chicken

Instructions

  1. Add quick cooking rice to boiling water; set aside.
  2. Melt margarine and fry chopped onion until soft.
  3. Add Cheez Whiz to onion and butter to soften.
  4. Add cream of chicken soup, milk, salt, and pepper.
  5. Stir in cooked rice, thawed chopped broccoli, and cooked chicken.
  6. Mix everything well.
  7. Transfer mixture to a 9 x 13-inch casserole dish.
  8. Sprinkle with buttered bread crumbs on top.
  9. Bake covered at 350°F for 30 minutes.
  10. Uncover and bake for an additional 15 minutes.
  11. To freeze, mix ingredients and freeze before baking.
  12. Thaw before baking and add bread crumbs, then bake according to directions.
