Chicken-Brown Rice Bake

Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons vegetable oil
  • 2 teaspoons curry powder
  • 3 cups chicken broth
  • 1 cup brown rice, uncooked
  • 1 (16 oz.) package frozen mixed vegetables
  • 2 cups chopped cooked chicken

Instructions

  1. Saute onion in oil until crisp-tender.
  2. Add curry powder and cook 1 minute, stirring constantly.
  3. Add chicken broth; bring mixture to a boil.
  4. Cover, reduce heat and simmer for 15 minutes. Stir in rice.
  5. Cover and cook over low heat for 50 minutes or until liquid is absorbed.
  6. Stir in vegetables and cooked chicken.
  7. Spoon into a lightly greased 12 x 8 x 2-inch baking dish.
  8. Cover and bake at 350°F for 30 to 35 minutes.
