Ingredients

  • 1/2 lb. Michigan pea beans
  • water
  • 1 1/2 c. onion, minced
  • 1 1/2 c. diced celery
  • 3 large cloves garlic, crushed and diced
  • 3 minced carrots
  • 1 jar Classico sauce
  • 1 1/2 qt. chicken broth
  • 1/8 tsp. cumin
  • salt

Instructions

  1. Wash and soak the Michigan pea beans overnight in cold water.
  2. Next day, drain the beans and cook in 1 1/2 quarts of water until tender.
  3. Drain the cooked beans.
  4. In a large pot, sauté minced onion, diced celery, crushed garlic, and minced carrots until fragrant and vegetables are softened.
  5. Add the drained beans, Classico sauce, chicken broth, cumin, salt, and white pepper to the pot.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes to allow flavors to meld.
  7. Adjust seasoning to taste and serve hot.
