Ingredients

  • 1 lb. boned chicken breasts
  • flour
  • 5 Tbsp. butter
  • 2 cloves garlic, minced
  • 5 scallions, sliced thin
  • 1 Tbsp. lime juice
  • 1 tsp. lime zest
  • bread crumbs
  • 1/2 cup white wine

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Dredge chicken breasts in flour, shaking off excess.
  3. In a large skillet, heat butter over medium heat.
  4. Saute chicken breasts for 3 minutes per side until golden.
  5. Remove chicken and place in a shallow casserole or gratin dish.
