Ingredients

  • 8 oz. medium noodles
  • 1/2 c. butter or margarine
  • 3 1/2 c. milk
  • 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 2 (10 3/4 oz.) cans chicken gravy
  • 4 c. diced cooked chicken
  • 2 Tbsp. pimento, chopped
  • 1/2 c. fine dry bread crumbs
  • 1 1/2 Tbsp. melted butter

Instructions

  1. Cook noodles according to package directions.
  2. Add 2 tablespoons butter and 1/2 cup milk to the cooked noodles.
  3. In a kettle, melt the remaining 6 tablespoons butter.
  4. Blend in flour, salt, and white pepper.
  5. Add the remaining 3 cups of milk and cook, stirring, until the mixture thickens and bubbles.
  6. Stir in chicken gravy, cooked chicken, chopped pimento, and the noodles. Spread the mixture in a 9 x 13-inch baking dish.
  7. Cover and bake at 350°F (175°C) for 25 minutes.
  8. Combine bread crumbs and 1 1/2 tablespoons melted butter; blend in processed American cheese.
  9. Sprinkle the bread crumb mixture around the edges of the casserole.
  10. Bake uncovered for an additional 10 minutes until golden and bubbly.
