Ingredients

  • 1 1/2 cups cooked chicken, diced
  • 1/4 cup broth
  • 3/4 cup mayonnaise
  • 2 tablespoons onion, chopped
  • 1 1/2 cups cooked rice
  • 1 can cream of chicken soup
  • 1/2 teaspoon salt
  • 1 cup diced celery
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 2 cups crushed potato chips

Instructions

  1. Mix all ingredients except potato chips and place in a greased casserole dish.
  2. Top with crushed potato chips.
  3. Bake at 400°F for 15 to 20 minutes until heated through and golden.
