Ingredients

  • 1 whole chicken, boiled
  • 1 can cream of chicken or mushroom soup
  • 1 cup sour cream
  • 1 stick of butter, melted
  • 1 pack saltine crackers, coarse crumbs
  • almonds

Instructions

  1. Bone the cooked chicken and cut into bite-sized pieces.
  2. Mix the cream of chicken or mushroom soup with the sour cream.
  3. Layer half of the chicken in a greased 9x9 or 9x11 baking dish.
  4. Spread half of the soup and sour cream mixture over the chicken layer.
  5. Repeat with the remaining chicken and soup mixture to create a second layer.
  6. Coarsely crush the saltine crackers and toss with melted butter.
  7. Sprinkle the cracker crumbs evenly over the casserole.
  8. Sprinkle almonds over the cracker crumbs.
  9. Bake in a preheated oven at 350°F for 30 minutes.
