  • 4 whole chicken breasts
  • 3 cans cream of chicken soup
  • 1 pint sour cream
  • 3/4 lb Jack cheese, grated
  • 3/4 lb Swiss cheese, grated
  • green onion tops, diced
  • 1 small can sliced black olives
  • 1 small onion, diced
  • 1 small can diced green chilies

Instructions

  1. Bake chicken in a 300° or 350° oven for 40 minutes, basting with butter.
  2. When cool enough to handle, skin, bone, and dice the chicken.
  3. Combine cream of chicken soup, diced green chilies, sour cream, sliced olives, diced onion, and some of the grated cheese.
  4. Set aside 1½ cups of this mixture.
  5. Add the diced chicken to the remaining mixture.

Tips & Substitutions

For a quicker version, you can use rotisserie chicken instead of baking your own. If you want to lighten it up, consider using low-fat sour cream and cheese. You can also swap out the Swiss cheese for Monterey Jack or omit the olives if you’re not a fan. When assembling the chalupas, ensure the tortillas are warmed to prevent cracking.

Serving Suggestions

These chicken chalupas are fantastic served with a side of Mexican rice or a fresh salad. You can also garnish with additional diced green onions or a drizzle of salsa for added flavor. They pair beautifully with Delicious Chicken Enchiladas for a festive meal.

Storage & Reheating

Store any leftover chicken chalupas in an airtight container in the refrigerator for up to 3 days. To reheat, place them in the oven at 350°F for about 15-20 minutes or until heated through. You can also microwave them, but this may result in a softer tortilla.

Frequently Asked Questions

Can I use corn tortillas instead of flour tortillas for chicken chalupas?

Yes, you can use corn tortillas, but they may require a bit more care when shaping to avoid breaking. Warm them up before assembling to make them more pliable. Just ensure they are thin enough to hold the filling without falling apart.

How can I make this recipe spicier?

To add some heat, consider incorporating jalapeños into the chicken mixture or using spicy diced green chilies. You can also serve the chalupas with hot sauce on the side for those who enjoy an extra kick.

Can I freeze chicken chalupas for later use?

Yes, you can freeze assembled chalupas before baking. Just wrap them tightly in plastic wrap and place them in a freezer-safe container. When ready to eat, thaw them overnight in the fridge and bake as directed for a delicious meal any time.
