Ingredients

  • 1 (2 to 2 1/2 lb.) ready-to-cook broiler-fryer chicken, cut up
  • seasoned flour
  • 4 tsp. dried thyme
  • 3 Tbsp. butter or margarine
  • 4 chopped scallions or small onions
  • 1/4 lb. chopped mushrooms
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2 diced tomatoes
  • 1/3 cup apple juice
  • 2 Tbsp. fresh, frozen or canned lemon juice
  • 2 Tbsp. snipped chives

Instructions

  1. Coat the chicken pieces with seasoned flour that has dried thyme mixed in.
  2. In a large skillet, heat butter and sauté the chicken until golden on all sides.
  3. Add chopped scallions, chopped mushrooms, sugar, salt, lemon juice, apple juice, and diced tomatoes to the skillet.
  4. Cover and cook slowly for 35 to 45 minutes, or until the chicken is fork tender.
  5. Sprinkle with chopped chives before serving.
