Chicken Chasseurs

Ingredients
- 1 (2 to 2 1/2 lb.) ready-to-cook broiler-fryer chicken, cut up ⓘ
- seasoned flour ⓘ
- 4 tsp. dried thyme ⓘ
- 3 Tbsp. butter or margarine ⓘ
- 4 chopped scallions or small onions ⓘ
- 1/4 lb. chopped mushrooms ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. sugar ⓘ
- 2 diced tomatoes ⓘ
- 1/3 cup apple juice ⓘ
- 2 Tbsp. fresh, frozen or canned lemon juice ⓘ
- 2 Tbsp. snipped chives ⓘ
Instructions
- Coat the chicken pieces with seasoned flour that has dried thyme mixed in.
- In a large skillet, heat butter and sauté the chicken until golden on all sides.
- Add chopped scallions, chopped mushrooms, sugar, salt, lemon juice, apple juice, and diced tomatoes to the skillet.
- Cover and cook slowly for 35 to 45 minutes, or until the chicken is fork tender.
- Sprinkle with chopped chives before serving.
