Instructions

  1. Cream Crisco and sugar together until light and fluffy.
  2. Add egg yolks one at a time, beating well after each addition.
  3. Alternately add liquids (orange juice, maple syrup, hot coffee) and dry ingredients (flour, soda, spices, salt, mace), starting and ending with dry ingredients, mixing after each addition.
  4. Stiffly beat egg whites until stiff peaks form.
  5. Gently fold beaten egg whites into the batter.
  6. Dredge fruit and nuts in one cup of flour, then fold into the batter.
  7. Steam the cake for 3 hours.
  8. After steaming, dry out in a slow oven for 1 hour.
