Ingredients

  • 3 lb. frying chicken
  • 1 cup chopped bell pepper
  • 1 large onion
  • 4 Tbsp. oil or shortening
  • 1 can Ro-Tel tomatoes and green chilies
  • 2 cans cream of chicken soup
  • 1 cup chicken broth
  • 10 oz. corn tortillas
  • 4 to 6 oz. Cheddar cheese
  • Chili powder

Instructions

  1. Simmer the chicken in seasoned water (salt, garlic, bay leaf) for 45 minutes to an hour. Cool, debone, and cut into large bite-sized pieces.
  2. Saute onions and bell peppers in oil until tender but not brown.
  3. Add cream of chicken soup, chicken broth, and Ro-Tel tomatoes, stirring thoroughly to remove lumps.
  4. Heat the mixture to boiling.
  5. Spread half of the tortilla pieces in the bottom of an oiled pan.
  6. Spread half of the chicken pieces over the tortillas.
  7. Pour half of the soup mixture over the chicken.
  8. Repeat the layers: tortillas, chicken, and soup mixture.
  9. Sprinkle shredded Cheddar cheese over the top.
  10. Lightly sprinkle chili powder on top.
  11. Bake in a 350°F oven for 45 minutes or until golden brown.
