Chicken Chihuahua

- Simmer the chicken in seasoned water (salt, garlic, bay leaf) for 45 minutes to an hour. Cool, debone, and cut into large bite-sized pieces.
- Saute onions and bell peppers in oil until tender but not brown.
- Add cream of chicken soup, chicken broth, and Ro-Tel tomatoes, stirring thoroughly to remove lumps.
- Heat the mixture to boiling.
- Spread half of the tortilla pieces in the bottom of an oiled pan.
- Spread half of the chicken pieces over the tortillas.
- Pour half of the soup mixture over the chicken.
- Repeat the layers: tortillas, chicken, and soup mixture.
- Sprinkle shredded Cheddar cheese over the top.
- Lightly sprinkle chili powder on top.
- Bake in a 350°F oven for 45 minutes or until golden brown.
