Chicken Chimichangas

Ingredients

  • 1 lb cooked chicken
  • 3/4 tsp ground cumin
  • 1/4 tsp salt
  • 8 8-inch flour tortillas
  • 1/2 cup sliced green onions
  • 1/2 tsp dried oregano
  • 16 oz jar salsa or picante sauce (divided)
  • 8 oz shredded Monterey Jack or Cheddar cheese (divided)
  • sour cream (optional)

Instructions

  1. Combine cooked chicken, green onions, cumin, oregano, and salt in a large saucepan.
  2. Stir in 2/3 cup salsa or picante sauce.
  3. Cook over medium heat for 5 minutes, stirring often.
  4. Spoon about 2 tablespoons of chicken mixture just below the center of each tortilla.
  5. Sprinkle evenly with half of the shredded cheese.
  6. Fold the left and right sides of the tortilla to partially enclose the filling.
  7. Fold up the top and bottom edges of the tortilla to form a square.
  8. Place the folded side down in a lightly greased baking dish coated with cooking spray.
  9. Repeat with the remaining tortillas.
  10. Bake at 475°F for 13 minutes.
  11. Heat the remaining salsa in a small saucepan.
  12. Pour the heated salsa over the baked chimichangas and sprinkle with the remaining cheese.
  13. Top with sour cream if desired.
