Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, chopped
  • 1 Tbsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. cayenne pepper
  • pinch of ground cinnamon
  • 3 c. chicken broth
  • 1 (16 oz.) can tomatoes, chopped, with juice
  • 12 purchased tamales (3 oz. each)
  • 1 (15 oz.) can pinto beans, rinsed and drained
  • 1 c. corn kernels
  • shredded Cheddar cheese

Instructions

  1. Heat a heavy pan and add ground beef, chopped onion, chopped bell pepper, and chopped garlic; cook until beef is browned.
  2. Add chili powder, cumin, cayenne pepper, and ground cinnamon; cook for 1 minute.
  3. Add chicken broth and chopped tomatoes with juice to the pan.
  4. Cover and simmer the mixture for 30 minutes.
  5. Add the purchased tamales, rinsed and drained pinto beans, and corn kernels to the soup.
  6. Serve topped with shredded Cheddar cheese.
