  • 2 cups shredded lettuce

Instructions

  1. Preheat oven to 375°F.
  2. In a 1-quart bowl, combine mayonnaise, Dijon mustard, snipped parsley, and chopped onion; mix well.
  3. In a 2-quart batter bowl, flake the chicken with a pastry blender and chop the bacon in a food chopper.
  4. Add bacon, 3/4 cup of Swiss cheese, and 1/3 cup of mayonnaise; mix well.
  5. Unroll the crescent dough and separate into 16 triangles.
  6. Arrange triangles in a circle on a 13-inch round baking stone with wide ends overlapping in the center and points toward the outside, leaving a 5-inch opening in the center.
  7. Using a medium stainless steel scoop, evenly scoop the chicken mixture onto the widest end of each triangle.
  8. Bring the outside points up over the filling and tuck under the wide ends of the dough at the center; the filling will not be completely covered.
  9. Slice the tomatoes, cut each slice in half, and place one tomato half over the filling between the openings of the ring.
  10. Bake for 20 to 25 minutes or until deep golden brown.
  11. Remove from oven and immediately sprinkle with the remaining 1/4 cup of Swiss cheese.
  12. Cut the red bell pepper in half with V-shaped cutters, remove membranes and seeds, and fill with the remaining mayonnaise mixture.
  13. Place the stuffed bell pepper in the center of the ring.
  14. Arrange shredded lettuce around the pepper and serve by slicing.
