  • 1/4 c. basil, chopped
  • 1/2 c. onion, finely chopped
  • 1 small hot pepper, finely chopped
  • 1/4 c. cilantro, finely chopped
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 1/2 c. vinegar or lime juice
  • chopped, dry roasted peanuts

Instructions

  1. Mix the shredded chicken and cabbage in a bowl.
  2. Add chopped basil, finely chopped onion, and chopped cilantro to the mixture.
  3. In a separate small bowl, mix vinegar or lime juice, finely chopped hot pepper, salt, and sugar to make the dressing.
  4. Pour the dressing over the cabbage mixture just before serving.
  5. Sprinkle chopped, dry roasted peanuts on top before serving.
