Ingredients

  • 4 cups crumbled cornbread
  • 1/4 cup chopped onions
  • 1 1/2 cups chopped chicken
  • 1 cup cream of chicken soup
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1 1/2 cups chicken broth

Instructions

  1. Combine crumbled cornbread, chopped green pepper, chopped onions, and chopped celery in a bowl.
  2. Mix well. Place half of the mixture in a 2-quart baking dish.
  3. Spread chopped chicken over the cornbread layer.
  4. Mix cream of chicken soup with chicken broth and pour over the chicken layer.
  5. Add the remaining cornbread mixture on top and press down gently.
  6. Set aside the casserole for 20 minutes to rest.
  7. Cover and bake at 350°F (175°C) for 45 minutes.
