Ingredients

  • 3 lb. chicken cutlets
  • sliced mushrooms
  • cherry tomatoes
  • sliced onions
  • diced green peppers
  • flavored bread crumbs
  • grated Parmesan cheese
  • 2 to 3 eggs
  • butter
  • chicken broth

Instructions

  1. Cut chicken into bite-sized pieces.
  2. Dip chicken pieces in beaten eggs, then shake in a mixture of flavored bread crumbs and grated Parmesan cheese using a plastic bag.
  3. Saute the coated chicken in a generous amount of butter until golden brown.
  4. Remove chicken to a casserole dish or baking pan.
  5. Saute sliced mushrooms, cherry tomatoes, sliced onions, and diced green peppers in the same pan, scraping up browned bits.
  6. Add the sautéed vegetables to the chicken and mix together.
  7. Pour 1/4 to 1/2 cup of chicken broth into the pan and heat briefly.
  8. Pour the mixture over the chicken in the casserole dish.
  9. Bake at 350°F until bubbly and somewhat crispy on top, about 25 to 30 minutes.
  10. Serve hot with rice.
