Ingredients

  • 6 chicken cutlets, halved
  • 2 eggs
  • 1 cup water
  • 2 teaspoons paprika
  • 3 cloves garlic
  • seasoned bread crumbs
  • margarine
  • 1/3 cup chicken broth
  • 3/4 cup white wine
  • 8 ounces Mozzarella cheese
  • 8 ounces mushrooms, sliced

Instructions

  1. Marinate the chicken cutlets in eggs, water, paprika, and garlic for 2 hours.
  2. Bread the marinated chicken in seasoned bread crumbs and sauté in margarine until browned.
  3. Place the browned chicken in an oblong casserole dish lined with foil.
  4. Add chicken broth, white wine, cheese, and mushrooms (or olives, or snow peas) to the dish.
  5. Cover with foil and bake at 350°F for 20 minutes.
  6. Remove the foil cover and bake for an additional 15 minutes.
  7. Serve over rice.
