Ingredients

  • 1 chicken, cooked and cut up
  • 8 flour tortillas
  • 3 oz. cream cheese
  • 1 Tbsp. milk
  • 1/4 c. chopped celery
  • 1/4 c. chopped onion
  • 2 Tbsp. margarine
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 2 (4 oz.) cans chopped green chilies
  • 1 c. shredded Cheddar cheese

Instructions

  1. Mix chicken, cream cheese, milk, and onion.
  2. Place 1/3 cup of the mixture in each flour tortilla and roll them up.
  3. Place seam side down in a greased baking dish.
  4. Mix together sour cream, cream of chicken soup, and drained chilies, then pour over the enchiladas.
  5. Cover the dish with foil.
  6. Bake for 35 minutes at 350°F.
  7. Top with Cheddar and Monterey cheese.
  8. Bake uncovered until the cheese is melted.
