Ingredients

  • 4 whole boneless chicken breasts
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 1 can beef consomme
  • 1/2 cup Madeira wine or dry red wine
  • 3/4 cup butter, softened
  • 1 cup crumbled Blue cheese

Instructions

  1. Dredge chicken in flour; reserve remaining flour.
  2. In skillet, brown chicken in butter over medium heat for about 15 minutes. Place on platter; keep warm.
  3. Add reserved flour to skillet; brown slightly, stirring constantly, with a wire whisk.
  4. Add beef consomme, Madeira wine, softened butter, and crumbled Blue cheese.
  5. Bring to a boil, reduce heat and simmer for 5 minutes.
  6. Spoon sauce over chicken to serve. Garnish with slivered almonds.
