- Dredge chicken in flour; reserve remaining flour.
- In skillet, brown chicken in butter over medium heat for about 15 minutes. Place on platter; keep warm.
- Add reserved flour to skillet; brown slightly, stirring constantly, with a wire whisk.
- Add beef consomme, Madeira wine, softened butter, and crumbled Blue cheese.
- Bring to a boil, reduce heat and simmer for 5 minutes.
- Spoon sauce over chicken to serve. Garnish with slivered almonds.
