  • 1 (No. 2) can tomatoes
  • 1 quart water
  • 3 cups okra (fresh or frozen)

Instructions

  1. Cut the chicken into serving pieces and wash thoroughly in cold water.
  2. Pat the chicken dry with a towel.
  3. Heat 2 tablespoons of fat in a soup kettle or large pot.
  4. Add the chicken and diced ham to the pot. Cover and cook for 15 minutes.
  5. Add salt, pepper, chopped onion, chopped green pepper, thyme, and canned tomatoes.
  6. Pour in the water.
  7. Cover the pot and let it simmer for 2 hours or until the chicken is tender.
  8. Add the okra to the stew.
  9. Cover and cook for an additional 20 minutes or until the okra is tender.
  10. If desired, remove the chicken from the bones before serving.
