Ingredients

  • 1 pkg. cut up chicken
  • 2 slices bacon
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup uncooked rice
  • 1/2 cup chopped onion
  • 1 Tbsp. chicken broth
  • 2 cups hot water
  • 1/8 tsp. hot sauce
  • 1 can black-eyed peas, drained
  • 1/4 cup chopped parsley
  • 1/2 tsp. thyme leaves, crushed

Instructions

  1. Cook bacon in a large pan until crisp.
  2. Remove bacon, drain, crumble, and set aside.
  3. Drain all but 2 tablespoons of drippings from the pan.
  4. In the same pan, add chicken and cook, turning until browned on all sides.
  5. Sprinkle chicken with salt and pepper.
  6. Reduce heat to low, cover, and simmer chicken for 15 minutes.
  7. Add rice and chopped onion to the pan, stir in chicken broth and hot sauce.
  8. Pour the rice mixture over the chicken in the pan.
  9. In a bowl, mix black-eyed peas, chopped parsley, and crushed thyme.
  10. Add the black-eyed pea mixture to the pan and stir gently to combine.
  11. Cover and cook for about 25 minutes longer, or until everything is tender.
  12. Sprinkle the cooked bacon on top and serve.
