- Cook bacon in a large pan until crisp.
- Remove bacon, drain, crumble, and set aside.
- Drain all but 2 tablespoons of drippings from the pan.
- In the same pan, add chicken and cook, turning until browned on all sides.
- Sprinkle chicken with salt and pepper.
- Reduce heat to low, cover, and simmer chicken for 15 minutes.
- Add rice and chopped onion to the pan, stir in chicken broth and hot sauce.
- Pour the rice mixture over the chicken in the pan.
- In a bowl, mix black-eyed peas, chopped parsley, and crushed thyme.
- Add the black-eyed pea mixture to the pan and stir gently to combine.
- Cover and cook for about 25 minutes longer, or until everything is tender.
- Sprinkle the cooked bacon on top and serve.
