Ingredients

  • 2 small acorn squash
  • Soy-Ginger Sauce
  • 1 Tbsp. oil
  • 1 lb. boneless, skinless chicken breast
  • 1/2 cup finely diced red bell pepper
  • 1 small onion, finely chopped
  • 2 small tomatoes, finely chopped
  • 1/2 tsp. pepper

Instructions

  1. Cut each acorn squash in half lengthwise and scoop out the seeds.
  2. Arrange the squash halves on an oiled baking pan, cut side down.
  3. Bake until tender, about 40 minutes.
