Ingredients

  • 1 (2 1/2 lb.) broiler-fryer, skinned and quartered
  • 1/4 tsp. garlic salt
  • 1/8 tsp. paprika
  • 1 large onion, cut into 4 slices
  • 1 large potato, cut into 8 slices
  • 2 carrots, scraped and cut into 3/4-inch pieces
  • 2 stalks celery, cut into 3/4-inch pieces
  • 1 (4 oz.) can sliced mushrooms, drained

Instructions

  1. Cut four 24 x 18-inch pieces of heavy-duty tinfoil.
  2. Place a chicken quarter in the center of each piece; sprinkle with garlic salt and paprika.
  3. Top evenly with onion, potato, carrots, celery, and mushrooms.
  4. Spoon soup evenly over each portion.
  5. Seal the bundles and place them on a 15 x 10 x 1-inch jellyroll pan.
  6. Bake at 400° for 1 hour and 15 minutes or until done.
