Ingredients

  • 3 onions, finely chopped
  • 1/4 cup ghee or butter
  • 1 clove garlic
  • 1-inch piece ginger root, grated
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 pound diced boneless chicken breasts
  • 1 teaspoon ground cloves
  • 2 tomatoes, skinned and mashed
  • 1 1/4 cups vegetable stock
  • 1 or 2 dried red hot peppers, chopped
  • 1/3 cup heavy cream
  • Chopped coriander leaves

Instructions

  1. Fry the chopped onions in ghee or butter until golden brown.
  2. Add the garlic, ginger, turmeric, cinnamon, ground cloves, and a little water; cook for 2 minutes.
  3. Add the mashed tomatoes and simmer until the mixture forms a thick sauce.
  4. Pour in the vegetable stock, season with salt and pepper, add chopped red chilies, and bring to a boil.
  5. Add the diced chicken breasts, cover, and cook until done, about 15 minutes.
  6. Stir in the heavy cream just before serving.
  7. Garnish with chopped coriander leaves and serve.
