Ingredients

  • 4 chicken breasts
  • 2 cloves garlic
  • 1 Tbsp. vegetable oil
  • 8 oz. can chunk pineapple in juice
  • 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 3/4 c. dry white wine
  • 1 c. sour cream
  • 1/2 c. diced scallions

Instructions

  1. Brown the chicken breasts well in vegetable oil.
  2. Add pressed garlic, salt, and crumbled thyme to the skillet.
  3. Drain pineapple juice from the can into the skillet. Add dry white wine, cover, and simmer for 30 minutes.
  4. Remove chicken to serving plates.
  5. Stir sour cream into the pan juices; add pineapple chunks and diced scallions, then heat through.
  6. Spoon the sauce over the chicken and serve.
