Chicken Lasagna Rolls

- Preheat oven to 375°F and spray a medium baking dish with vegetable cooking spray.
- Cook lasagna noodles according to package directions without adding salt. Drain and lay flat on waxed paper.
- In a small saucepan over medium-low heat, combine cream cheese, milk, and Parmesan cheese. Stir until smooth. Set aside.
- Spray a large nonstick skillet with vegetable cooking spray and heat over medium heat.
- Add sliced mushrooms and chopped green onions to the skillet and cook, stirring, until tender, about 5 minutes.
- In a blender or food processor, combine the mushroom mixture, ricotta cheese, shredded cooked chicken, and chopped parsley. Process until smooth.
- Spoon the mushroom mixture down the center of each noodle and roll up tightly.
- Optional: Drizzle a small amount of the sauce down the center of each rolled noodle.
- Place the rolls, filling side up, in the prepared dish. Spoon the remaining sauce on top.
- Cover with foil and bake until heated through, about 25 minutes.
- Serve immediately.
