Ingredients

  • 1/2 c. margarine
  • 1/2 c. flour
  • 1/8 tsp. salt
  • 1/2 tsp. basil
  • 2 cans chicken broth
  • 24 oz. cottage cheese
  • 1 egg
  • 1/2 lb. lasagna noodles
  • 1/2 c. Parmesan cheese
  • 2 1/2 c. chicken
  • 10 oz. frozen spinach
  • 1/2 lb. mozzarella cheese

Instructions

  1. Melt margarine in a large saucepan.
  2. Add flour, salt, and basil.
  3. Stir until thick and bring to a boil.
  4. In a bowl, combine cottage cheese and beaten egg to make the cheese mixture.
  5. In a 9x13 pan, layer the chicken mixture, followed by noodles, cheese mixture, spinach, and mozzarella cheese.
  6. Repeat the layers until all ingredients are used.
  7. Ensure the last layer is chicken and cover it with Parmesan cheese.
  8. Bake at 375° for 45 minutes.
