Ingredients

  • 2 lb. chicken cutlets
  • 1/2 lb. flour
  • 2 eggs
  • 3 Tbsp. peanut oil
  • salt and pepper
  • 1/2 can clear chicken broth
  • 1/2 lb. butter
  • 1/2 glass lemon juice

Instructions

  1. Dip each slice of chicken into flour, then beaten eggs.
  2. Fry in hot peanut oil until browned on both sides.
  3. Remove chicken from pan and drain on paper towels.
  4. In the same pan, add chicken broth, butter, and lemon juice, and cook until sauce is slightly thickened.
  5. Serve chicken with the lemon butter sauce.
