  • white pepper to taste

Tips & Substitutions

For added depth of flavor, consider sautéing garlic with the onions. If you want a creamier texture, you can blend a portion of the soup before adding the spinach. Substitute vegetable stock for a vegetarian version, or add cooked chicken for extra protein. Fresh herbs like thyme or dill would also enhance the soup's taste.

Serving Suggestions

Serve this hearty Harvest Potato Soup with crusty bread or a simple side salad for a complete meal. It pairs beautifully with Chicken And Rice Gumbo for a comforting dinner spread. Garnish with additional green onions or a dollop of sour cream for extra flavor before serving.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the soup on the stovetop over low heat, stirring occasionally. If the soup thickens too much in the fridge, add a splash of broth or water to reach your desired consistency.

Frequently Asked Questions

Can I make this soup ahead of time?

Absolutely! This soup tastes even better the next day as the flavors meld. Prepare it a day in advance and store it in the refrigerator. Just remember to reheat it gently to avoid overcooking the spinach.

Can I freeze Harvest Potato Soup?

Yes, you can freeze this soup. Allow it to cool completely before pouring it into freezer-safe containers. It can be stored for up to 3 months. To reheat, thaw overnight in the refrigerator and warm on the stovetop, adding a bit of liquid if necessary.

What can I use instead of spinach?

If you don't have spinach, kale or Swiss chard make excellent substitutes. Just chop them into smaller pieces and add them at the same time as you would the spinach. These greens will add a similar texture and nutritional value to the soup.
