Ingredients

  • 1 lb. chicken livers
  • 1 Tbsp. flour
  • 1 Tbsp. butter
  • 1 c. milk
  • 1/4 tsp. pepper
  • Salt to taste
  • English muffins

Instructions

  1. Cook the chicken livers by boiling until cooked through.
  2. While the livers are cooking, melt the butter in a frying pan.
  3. Stir in the flour and gradually add the milk, stirring constantly to make a smooth sauce.
  4. Add pepper and salt to taste.
  5. Once the livers are cooked, cut them into halves and add to the cream sauce.
  6. Simmer on low heat for 5 to 10 minutes until well blended and heated through.
  7. Serve the chicken livers and gravy over toasted English muffins.
