Ingredients

  • 1 cup uncooked macaroni
  • 1 1/2 to 2 cups cooked chicken, bite-sized
  • 4 oz. sharp shredded cheese
  • 1 can (10 1/2 oz.) cream of chicken soup
  • 1/2 cup milk
  • 1 can (3 oz.) chopped mushrooms, drained
  • 1/4 cup pimento
  • 1/2 teaspoon mustard
  • 1/2 cup mayonnaise
  • 1 tablespoon melted butter

Instructions

  1. Drain the cooked macaroni and combine with chicken, cheese, cream of chicken soup, milk, mushrooms, pimento, and mustard in a bowl.
  2. Pour the mixture into a greased casserole dish.
  3. Spread mayonnaise evenly over the top of the casserole.
  4. Mix bread crumbs with melted butter and sprinkle on top of the mayonnaise layer.
  5. Optionally, crushed potato chips can be used instead of bread crumbs.
  6. Bake in a 350°F (175°C) oven for about 45 to 50 minutes until bubbly and golden.
