Ingredients

  • 4 whole chicken breasts (8 pieces), boned and skinned
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 6 Tbsp. margarine
  • 1 1/4 cup Marsala or dry sherry, divided
  • juice of 1/2 lemon

Instructions

  1. Pound the chicken breasts slightly and dredge in a mixture of flour, salt, pepper, and oregano.
  2. Melt margarine in a skillet over medium heat and brown the chicken on both sides.
  3. Add 1 cup of Marsala wine to the skillet, cover, and simmer for 30 minutes or until the chicken is tender.
  4. Squeeze the juice of half a lemon over the cooked chicken before serving.
