Ingredients

  • 1 small bunch arugula
  • 1/4 cup oil
  • 1 red pepper, julienned
  • 2 medium cloves garlic, crushed
  • 2 1/2 lb chicken, cut in serving pieces
  • 1 lb sausage, cut in pieces
  • 3/4 lb sliced mushrooms
  • 1 medium onion, sliced
  • 1/4 teaspoon rosemary
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 8 oz. linguine
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Rinse the arugula well and pat dry.
  2. Reserve half of the arugula for garnish.
  3. Discard tough stems from the remaining arugula, then slice thin.
  4. In a large skillet, heat 1/4 cup of oil over medium heat.
  5. Add the crushed garlic and julienned red pepper, sauté until fragrant.
  6. Add the chicken pieces and cook until browned on all sides.
  7. Add the sausage pieces and cook until browned.
  8. Stir in the sliced mushrooms and sliced onion; cook until vegetables are tender.
  9. Sprinkle with rosemary and season with salt and pepper.
  10. Pour in chicken broth and white wine; bring to a simmer.
  11. Cover and cook until chicken is cooked through, about 25 minutes.
  12. Meanwhile, cook linguine according to package instructions; drain.
  13. In a small bowl, stir flour into a little water to make a slurry.
  14. Add the slurry to the skillet to thicken the sauce; cook for a few minutes.
  15. Toss cooked linguine with the sauce in the skillet.
  16. Garnish with reserved arugula and serve hot.
