Ingredients

  • 6 to 8 cups chicken broth
  • 2 cups uncooked medium noodles
  • 1 (14 1/2 oz) can Italian-style diced tomatoes
  • 1 (29 oz) can mixed vegetables, drained
  • 2 1/2 to 3 cups cooked chicken, coarsely chopped
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice

Instructions

  1. In a large soup pot, heat the chicken broth to boiling.
  2. Add the uncooked medium noodles and cook over medium heat for about 7 minutes.
  3. Add the drained mixed vegetables, diced tomatoes, cooked chicken, black pepper, and lemon juice.
  4. Continue to cook over low heat for another 8 to 10 minutes.
  5. Taste and adjust seasoning as needed, adding salt if desired.
