Ingredients

  • 2 Tbsp. butter
  • 1 lb. boneless chicken breast
  • 1 c. rice
  • 1 medium carrot
  • 1 small onion
  • 1 (14 1/2 oz.) can chicken broth
  • 1 can cream of mushroom soup
  • 1/8 tsp. pepper
  • 1/2 c. frozen peas

Instructions

  1. In a large skillet, brown the chicken pieces in butter; remove and set aside.
  2. In the same skillet, brown the rice, onion, and carrot until the rice is golden, stirring constantly.
  3. Stir in the chicken broth, cream of mushroom soup, and pepper; bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes, stirring occasionally.
  5. Add the frozen peas and cooked chicken; cover and simmer for an additional 5 minutes.
