Ingredients

  • 8 oz. can tomato sauce
  • 1 tsp. Italian seasoning
  • 1/4 tsp. garlic salt
  • 1/3 cup corn flake crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. dried parsley flakes
  • 2 large boneless chicken breasts
  • 1 egg
  • 1/2 cup shredded Mozzarella cheese

Instructions

  1. Mix tomato sauce, Italian seasoning, and garlic salt in a 2-cup measure.
  2. Cover with wax paper and microwave on High (100%) for 2 minutes; stir.
  3. Reduce power to Medium (50%) and microwave for 5 minutes, stirring once; set aside.
  4. Mix corn flake crumbs, Parmesan cheese, and parsley flakes.
  5. Dip chicken breasts in beaten egg, then in crumb mixture.
  6. Place in an 8 x 12-inch or 10-inch square casserole dish.
  7. Cover with wax paper.
  8. Microwave at Medium-High (70%) until chicken is tender, 9 to 14 minutes, rearranging after half the cooking time.
  9. Pour sauce over chicken.
  10. Sprinkle shredded Mozzarella cheese over chicken breasts.
  11. Sprinkle Parmesan cheese over the top.
  12. Microwave at Medium-high (70%) until cheese melts and sauce is hot, 2 to 5 1/2 minutes.
