Ingredients

  • 1 cooked and deboned chicken
  • 12 soft flour tortillas, cut into fourths
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup chicken stock
  • Jalapeno peppers to taste
  • 1 large onion
  • 0.5 pound Velveeta cheese, grated
  • 0.5 pound Cheddar cheese, grated
  • 1 carton sour cream
  • 1 tablespoon chili powder

Instructions

  1. Cook chicken in water with chili powder, garlic powder, and onion until tender.
  2. Combine cooked chicken with cream of chicken soup, cream of mushroom soup, chicken stock, chopped jalapenos, sour cream, and grated cheese.
  3. Butter a large baking dish.
  4. Layer a portion of tortillas at the bottom of the dish.
  5. Spread a layer of the chicken mixture over the tortillas.
  6. Add a layer of grated cheese over the mixture.
  7. Repeat layers of tortillas, chicken mixture, and cheese, ending with cheese on top.
  8. Bake in an oven preheated to 350°F for 45 minutes until bubbly and golden.
