Chicken Montezuma
A rich Tex-Mex casserole with tender chicken, creamy sauces, melted cheese, and spicy jalapenos, perfect for comforting family dinners or casual gatherings.
Ingredients
- 1 cooked and deboned chicken ⓘ
- 12 soft flour tortillas, cut into fourths ⓘ
- 1 can cream of chicken soup ⓘ
- 1 can cream of mushroom soup ⓘ
- 1 cup chicken stock ⓘ
- Jalapeno peppers to taste ⓘ
- 1 large onion ⓘ
- 0.5 pound Velveeta cheese, grated ⓘ
- 0.5 pound Cheddar cheese, grated ⓘ
- 1 carton sour cream ⓘ
- 1 tablespoon chili powder ⓘ
Instructions
- Cook chicken in water with chili powder, garlic powder, and onion until tender.
- Combine cooked chicken with cream of chicken soup, cream of mushroom soup, chicken stock, chopped jalapenos, sour cream, and grated cheese.
- Butter a large baking dish.
- Layer a portion of tortillas at the bottom of the dish.
- Spread a layer of the chicken mixture over the tortillas.
- Add a layer of grated cheese over the mixture.
- Repeat layers of tortillas, chicken mixture, and cheese, ending with cheese on top.
- Bake in an oven preheated to 350°F for 45 minutes until bubbly and golden.
