Ingredients

  • 2 boneless chicken breasts
  • 2 Tbsp. oil
  • 1 large clove garlic
  • 4 large mushrooms
  • salt
  • white pepper
  • 1/3 tsp. oregano
  • 1/4 tsp. parsley
  • 1/4 lb. butter

Instructions

  1. Fry chicken in hot oil until cooked, about 5 minutes.
  2. Discard all grease and add garlic and parsley.
  3. Return to heat and stir to pick up flavors.
  4. Remove from heat and add mushrooms and spices.
  5. Add butter and break into 4 or 5 pieces.
  6. Return to medium heat, stirring until butter is melted and hot.
  7. If butter separates, take off heat and add 1 teaspoon of water and cream all together again.
  8. Serve with a side of linguini and a tomato salad.
