Ingredients

  • 1 lb. tri-colored rotini
  • 1/4 c. olive oil
  • 1 1/2 c. ham, julienned
  • 1/2 c. red peppers, julienned
  • 1/2 c. yellow peppers, julienned
  • 1 c. mushrooms, sliced
  • 1 Tbsp. garlic, minced
  • 3/4 c. chicken broth
  • 3/4 c. fresh spinach, chopped
  • 1/2 c. Parmesan cheese
  • salt

Instructions

  1. Cook the rotini according to the package directions and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Saute ham, red peppers, yellow peppers, and mushrooms for 2 minutes.
  4. Add garlic, salt, and pepper; cook for about 4 minutes.
  5. Pour in chicken broth and simmer the mixture for 2 minutes.
  6. Add the cooked hot rotini and mix well.
  7. Stir in the chopped spinach and cook until wilted.
  8. Sprinkle with Parmesan cheese, blend well, and serve.
