Ingredients

  • 2 1/2 to 3 lb. chicken
  • 3 Tbsp. oil
  • 3 lb. okra, sliced
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 c. celery, chopped
  • 2 Tbsp. gumbo file
  • 2 c. rice
  • 4 c. water
  • salt and pepper to taste

Instructions

  1. Cook rice in 4 cups of water, then set aside.
  2. Boil chicken in a 10 or 12-quart soup pot until done.
  3. Remove chicken and debone.
  4. Return chicken to the pot.
  5. In another pot, heat 3 tablespoons oil, then add sliced okra, chopped onion, chopped bell pepper, and chopped celery.
  6. Cook until vegetables are smothered down, stirring constantly.
  7. Add the cooked vegetables and broth to the chicken in the main pot, stirring constantly to prevent boiling over.
  8. Simmer the mixture for about 2 hours.
  9. When almost done, add gumbo file to the pot.
  10. Season with salt and pepper to taste.
  11. Serve in soup bowls over cooked rice.
