Ingredients

  • 1 1/4 cups uncooked rice
  • 2 tablespoons chopped onion
  • 1/2 teaspoon salt
  • 2 stalks celery, chopped
  • 2 cups water
  • 1 (10 oz) can cream soup (chicken, celery, mushroom)
  • 4 oz can mushrooms
  • 2 1/2 chickens, cut up
  • 2 tablespoons margarine, melted
  • 1/2 teaspoon salt

Instructions

  1. Combine uncooked rice, chopped onion, salt, chopped celery, water, cream soup, and mushrooms in a 13 x 9-inch pan. Mix well.
  2. Arrange the chicken pieces skin side up on top of the rice mixture.
  3. Drizzle the melted margarine over the chicken and rice.
  4. Sprinkle with salt and poultry seasoning.
  5. Bake uncovered at 375°F for 1 hour or until the chicken is tender.
